Method

// PHASE 01
Freeze Everything

Red dragon fruit must be completely frozen to achieve the electric magenta colour and thick, sorbet-like texture. Fresh dragon fruit blended with ice gives a watered-down result. Freeze the fruit overnight minimum.

// PHASE 02
Minimal Liquid

Add coconut milk first โ€” just enough to get the blender moving. Use the tamper aggressively. The less liquid, the thicker and more vivid the result. You are aiming for a thick sorbet consistency, not a drinkable smoothie.

// PHASE 03
Blend to Neon

High speed 60 seconds, pressing down with tamper. Add lime juice and agave. Blend 10 more seconds. The colour should be an almost unnatural hot magenta that lights up the room. If it looks normal, add more dragon fruit.

// PHASE 04
Deploy & Garnish

Pour into a chilled glass or bowl immediately โ€” dragon fruit oxidises and the colour fades fast. Top with kiwi slices, chia seeds, and a sprinkle of coconut flakes. Consume within 10 minutes for peak colour.
